DESCRIPTION: A distinctive modern Merlot with the typical mulberryish and plummy quality of this variety, coupled with a bright cherry/ strawberry note that adds freshness and complexity.

PAIRING: Perfect with all red and white meat dishes, but equally delicious to drink on its own

PAIRING WITH OUR LOCAL FOODS: This Merlot is young and still fruity on the palate bordering on a slight sweetness. We recommend it with Beans stew with fried ripe plantain, Moimoi, Tatale and Aboboi, Jollof rice with beef or chicken, and as an accompaniment to starters.

Ageing: can be drunk immediately but will develop well for 3 years. The grapes come from the areas of Carcassonne and the Minervois; the two varieties were vinified separately. Both went through a period of cold soak. Fermentation on skins lasted 2 weeks prior to pressing. There was very limited use of press wine.
