The grapes are growing in the morainic hills from Quaternary period, featuring loamy gravelly and clay soil, manual harvesting in September in crates, soft pressing and extraction only of the free-run juice. Fermentation at low temperature, ageing of the wine for 8 months in steel tanks. After the second fermentation in bottle, it ages on the lees for at least 40 months before the remuage and the dégorgement.
